How do I change all of my music in my iTunes over to MP3 format?

I'm wanting to make an MP3 cd and it's driving me crazy because after I sit for an hour watching iTunes "convert music to MP3" it still won't make my cd. It says that the music isn't in MP3 format and is unable to make the cd. But yet.. I just sat and watched it supposedly convert my music to MP3 format! HELP!?!

      i use a program called NoteBurner that coverts iTunes songs into MP3's. The program is like a one time fee of like $35.00. And its well worth it.
